To make flourless chocolate almond cookies, line a baking sheet with parchment paper and heat the oven to 350 degrees Fahrenheit. Mix 3 cups of powdered sugar, 1/2 cup plus 3 tablespoons of cocoa, 1/2 teaspoon salt, 1 cup of mini chocolate chips and 1 1/2 cups of chopped almonds in a bowl, and set it aside. Beat egg whites until they have a foam, and add in 2 teaspoons of vanilla extract.
Pour the almond mix into the egg white mix, and stir until it becomes thick. Scoop dough balls and place them 2 inches apart on the baking sheet. Cook the cookies for 12 to 13 minutes until they achieve a shiny, cracked and puffed consistency, then let them cool off.
To make flourless peanut butter oatmeal cookies, mix 1/2 teaspoon ground cinnamon, 2/3 cup of rolled oats and 1 teaspoon of baking soda. In a bowl, beat an egg, then add 1 cup of peanut butter and 6 tablespoons of brown sugar, mixing them together. Mix everything together, then fold into the mixture 1/2 cup of chocolate chips. Let the dough cool off in the refrigerator for 30 minutes. Heat the oven to 350 degrees Fahreheit. Pour the mix onto baking sheets, and bake for 10 minutes.
