Make classic flan by melting 3/4 cup sugar in 1/4 cup water in a saucepan at medium-high heat, stirring only once. Once the caramel turns an amber color, remove the saucepan from the stove, and place it in an ice-water bath for a few seconds. Spoon the caramel into 8 ramekins.
In another saucepan, combine 3 cups whole milk and 6 tablespoons sugar over medium heat. Whisk together 4 eggs, 3 egg yolks, 6 tablespoons sugar and 1/4 teaspoon salt in another bowl. Spoon the hot milk into the whisked-egg mixture. Strain this custard through a sieve, add 1 teaspoon vanilla extract, and pour into the ramekins. Place the ramekins on rimmed baking sheet filled with boiling water, and bake at 325 degrees Fahrenheit for 35 to 42 minutes. Chill for eight hours before serving.
The Taste of Home recipe also starts with the same caramel-making process, but you pour it instead into a single round baking dish. To make the custard, beat together 1 8-ounce package softened cream cheese, 5 eggs, 1 14-ounce can sweetened condensed milk, 1 12-ounce can evaporated milk and 1 teaspoon vanilla extract. Pour the custard into the baking dish, and place the dish on a rimmed baking sheet filled with boiling water. Bake at 350 degrees for 50 to 60 minutes, and refrigerate overnight.
