These greens are low in calories and high in fiber and antioxidants. They are healthy and delicious in raw form and when used in cooking.
The exception in the otherwise healthy green leafy vegetable family is iceberg lettuce, which contains few nutrients. Sauteed onion or garlic with dark greens makes a healthy and nutritious dish, as does substituting romaine lettuce for iceberg lettuce on sandwiches.Olive oil is another healthy and versatile food. It contains antioxidants called polyphenols, which may reduce the risk of developing some cancers, such as breast and colon cancer. Experts recommend extra virgin oil, which is minimally processed and has plenty of healthy fats.
Nuts, such as almonds and walnuts, are also good sources of healthy fats. They are high in fiber and protein too, as are nut butters. Blueberries are high in antioxidants and vitamins, while eggs contain a good amount of protein and are low in fat.
