Allow the mixture to simmer while stirring often until it becomes thick, and place the chicken back into the pan with the sauce.

To make the Parmesan-roasted cauliflower, preheat the oven to 425 degrees Fahrenheit. While the oven heats, combine 6 ounces or 1 1/2 cups of cauliflower with 2 teaspoons of grated, reduced-fat Parmesan cheese, 1 teaspoon of chopped parsley leaves, 1/4 of a teaspoon of garlic powder and 1/4 teaspoon of black pepper.
