To make the paprika chicken with späetzle, whisk together 2 tablespoons of sweet Hungarian paprika and a 1/2 teaspoon of cayenne pepper, and sprinkle a sliced whole chicken with half of the mixture along with salt and pepper. Add some oil to a skillet, and sauté the chicken over medium-high heat until fully cooked, or brown the chicken, and bake it in the oven at 400 degrees Fahrenheit until cooked.
Leave the drippings in the pan after removing the chicken, and reduce the heat to medium. Add more oil, stir in a large, thinly sliced onion, and sprinkle it with 1 teaspoon of sugar. Cook the onions for about 5 minutes uncovered while stirring occasionally. Combine 1 cup of sour cream, 2 tablespoons of flour and the remaining paprika mix, and then add the sour cream mixture to the onions in the skillet while stirring gently. Allow the mixture to simmer while stirring often until it becomes thick, and place the chicken back into the pan with the sauce.
To make the Parmesan-roasted cauliflower, preheat the oven to 425 degrees Fahrenheit. While the oven heats, combine 6 ounces or 1 1/2 cups of cauliflower with 2 teaspoons of grated, reduced-fat Parmesan cheese, 1 teaspoon of chopped parsley leaves, 1/4 of a teaspoon of garlic powder and 1/4 teaspoon of black pepper. Add salt to taste, and toss all ingredients to mix. Drizzle 1 teaspoon of extra-virgin olive oil, and toss it again. Transfer the cauliflower to a non-stick baking dish, and bake it for 15 to 17 minutes, tossing it once halfway.
