Heat the pot until the liquid boils, and reduce the heat to a slow simmer. Cook the soup until the vegetables are tender, which takes about 25 minutes, and serve hot. Store any leftover soup covered in the refrigerator and warm individual servings. The soup keeps for several days when refrigerated.
