One fast and easy shrimp recipe is classic shrimp scampi, which calls for shrimp to be sautéed in garlic and butter. Another is roasted shrimp cocktail, which consists of oven-roasted shrimp and a tangy cocktail sauce.
To make classic shrimp scampi, heat 2 tablespoons of butter over medium heat in a large non-stick skillet. Add 1 1/2 pounds of medium shrimp that have been peeled and de-veined. Add 1/2 teaspoon of salt, and cook over medium-high heat for four minutes. Remove the pan from the heat, and stir in 4 more tablespoons of butter, along with 1 1/2 tablespoons of minced parsley.
To make roasted shrimp cocktail, place approximately 2 pounds of peeled and de-veined shrimp on a sheet pan along with 1 tablespoon of olive oil and 1/2 teaspoon each of kosher salt and freshly ground black pepper. Roast the shrimp in a 400 degree Fahrenheit oven for approximately eight to 10 minutes or until they are pink, firm and cooked through. Set the shrimp aside to cool while you make the sauce. For the cocktail sauce, combine 1/2 cup of chili sauce, 1/2 cup of ketchup, 3 tablespoons of prepared horseradish, 2 teaspoons of freshly squeezed lemon juice, 1/2 teaspoon of Worcestershire sauce and 1/4 teaspoon of hot sauce.
