Scrambled egg tacos, cottage cheese with minted pineapple, and apple and cheddar tartine are fast and easy recipes for breakfast. Each recipe takes only 10 minutes to prepare, and all three recipes serve two people.
To make scrambled egg tacos, crack 4 large eggs into a bowl, add 1/4 teaspoon each of salt and pepper, and beat the ingredients. Heat 1 tablespoon of unsalted butter in a nonstick skillet over medium-high heat and cook the eggs while stirring. Once cooked, divide the eggs evenly among 4 prewarmed corn tortillas. Top the tacos with salsa, avocado or cilantro.
For cottage cheese with minted pineapple, place 1 cup of sliced pineapple into a bowl, and add 1 tablespoon each of sugar and chopped fresh mint. Let the mixture sit for five minutes, and meanwhile divide 1 1/2 cups of low-fat cottage cheese among two small bowls. After the five minutes is up, add the pineapple on top of the cheese in the bowls. Optionally, add 1 tablespoon of pomegranate seeds into each bowl.
To make apple and cheddar tartine, split a small baguette into two by slicing it lengthwise, then cut into each slice crosswise. Top each slice with 1 tablespoon of apple butter, 1/4 thinly sliced apple and 1 ounce of cheddar cheese. Broil until the cheese melts.
