Add a green smoothie to your day to get the health benefits of kale. Add 1 cup chopped pineapple, 1 cup packed kale leaves, 1 cup frozen green grapes, 1 tablespoon lemon juice, 1 teaspoon grated ginger and 1 teaspoon flax seeds to a blender. Pulse on high until the ingredients become smooth. If the smoothie remains too thick, add 1 to 2 tablespoons of water to it, and blend again.
Enjoy a healthy dessert by making chia seed pudding. In a bowl, whisk together 1 cup vanilla almond milk, 1 cup Greek yogurt, 2 tablespoons maple syrup, 1 teaspoon vanilla extract and 1/8 teaspoon salt until combined. Fold in 1/4 cup chia seeds, and set aside for 30 minutes. Cover and store in the refrigerator overnight. Divide the pudding into 4 glasses. Make a topping by stirring together 1 pint chopped strawberries, 1/4 cup toasted sliced almonds and 4 teaspoons maple syrup. Spoon over the chia seed pudding, and serve immediately.
