Some escarole and Italian sausage recipes are Cooking Channel's Penne with Sausage and Escarole and Martha Stewart's Pasta with Sausage and Escarole. Both recipes take 10 to 15 minutes to prepare.
To make Cooking Channel's Penne with Sausage and Escarole, cook 1 pound of penne pasta in boiling water until tender. Set aside 1 cup of pasta water. Cook 2 diced onions and 1 diced red pepper in olive oil over medium heat. Add 1 1/2 pounds of crumbled Italian sausage, and cook the mixture for six minutes. Stir in 2 teaspoons of minced garlic and some escarole, and cook for five more minutes. Add in the penne pasta and pasta water. Simmer the mixture for two minutes. Serve the pasta with 1/2 cup grated of Parmesan cheese and 1/4 teaspoon of red pepper flakes.
For Martha Stewart's Pasta with Sausage and Escarole, cook 1 pound of rigatoni in boiling water for two fewer minutes than the package instructions indicate. Cook 2 minced garlic cloves in extra virgin olive oil for one minute. Add 1 pound of crumbled Italian sausage, and cook for six minutes. Stir in 1 cup of dry white wine, 1 cup of heavy cream, 1/4 cup of chopped parsley, 2 teaspoons of rosemary and 1/2 teaspoon of red pepper flakes. Bring the mixture to a simmer. Add a head of escarole, and cook for eight more minutes. Stir pasta into the mixture, and cook for three more minutes. Serve the pasta with shaved Parmesan cheese.
