Healthy shrimp recipes use ingredients that are low in fat and calories, such as beans, pasta, lemon juice and fresh vegetables. Two healthy recipes are lemony shrimp with couscous and white beans and tomato and shrimp stew.
To make lemony shrimp, boil 2 cups of water in a skillet pan, and add 1 box of couscous and 1/4 teaspoon of salt. Remove the pan from heat, cover it, and let it sit for five minutes before fluffing it with a fork. In a large skillet pan, melt 2 teaspoons of butter over medium-high heat. Cook 2 cloves of chopped garlic and 4 chopped scallions in the butter for 30 seconds. Add 1 pound of peeled, deveined shrimp, and continue cooking and stirring for three minutes. Stir in 1 can of cannellini beans, 1/2 cup of fresh parsley, 2 tablespoons of lemon juice and 1/4 teaspoon of pepper, and continue cooking for three minutes. Serve the mixture over couscous.
Prepare a light shrimp stew by cooking 3 cups of diced onion and 2 cloves of garlic in 1 tablespoon of warm olive oil until tender. Add 1/2 teaspoon of salt and pepper, 1 can of whole tomatoes and a dash of sugar, cooking for 10 minutes. Chop 1/2 cup of fresh basil, and add it to the pan. In a separate skillet, use salt and pepper to season 1 pound of thawed frozen shrimp that is peeled and deveined. Cook the shrimp for three minutes in 1 tablespoon of warm olive oil, and combine it with the tomato mixture. Toss in the cooked pasta, and garnish it with fresh basil, if desired.
