Make Muffin-Eggs by sautéing minced onion in some olive oil or butter and then adding thinly diced vegetables, such as butternut squash, bell peppers, tomatoes or spinach, to the pan. Pour the sautéed vegetables into six buttered cups of a muffin tin. In another bowl, whisk 12 eggs with salt and pepper to taste, and pour the mixture into the muffin tins. Bake the eggs at 350 degrees Fahrenheit for 12 to 15 minutes.
To make Egg Cups, whisk 5 eggs, 1 splash of milk, and salt and pepper to taste in a bowl. Spoon 1 10-ounce package of frozen spinach and 2 chopped scallions into 12 greased muffin cups, and top the vegetables with the egg mixture. Another recipe suggests adding pork sausage and green bell peppers to the egg mixture.
Mini Frittatas calls for 8 eggs, 1/2 cup of whole milk, 1/2 teaspoon of pepper and 1/4 teaspoon of salt. After whisking the ingredients together, add 4 ounces of chopped ham, 2 tablespoons of chopped parsley and 1/3 cup of grated Parmesan.
