Prepare the egg custard by beating together 2 eggs, 2 egg yolks, 1/3 cup of sugar and 1 teaspoon of vanilla extract. Simmer 2 cups of milk in a saucepan. Mix the whisked eggs into the warm milk. Strain the custard into ramekins, and place the ramekins in a deep baking dish. Fill the dish with hot water until it reaches halfway up to the ramekins, and bake the dish at 300 degrees Fahrenheit for 30 to 35 minutes. Insert a knife into the custard. If the knife comes out clean, the custard is set. Remove the baking dish from the oven, and allow the ramekins to cool for two hours before removing them from the water bath.
Another recipe uses 3 eggs instead 2 eggs with 2 egg yolks. It also uses 1 extra cup of milk. After making the custard, pour it into custard cups, and sprinkle the surface with 1/2 teaspoon of ground nutmeg. Bake the custard at 300 degrees Fahrenheit for 75 minutes.
