Some good egg breakfast casseroles include hash brown casserole and breakfast casserole featured on the Food Network. Other good casseroles are creamy egg strata and tomato-herb mini frittatas.
To make hash brown casserole, saute 1 chopped onion in 3 tablespoons of butter at medium-low heat for five minutes, and then add 4 cups of shredded hash browns. After five more minutes, remove the mixture, and cook 1 pound of sausage in the pan. Meanwhile, mix 2 1/4 cups of whole milk, 3 large eggs, 1 teaspoon of salt, 2 tablespoons of Dijon mustard and 1/4 teaspoon each of black pepper and grated nutmeg. Press the hash brown mixture into the bottom of a casserole dish, and layer it with 8 cups of cubed French bread, the cooked sausage and the egg mixture. Top the casserole with 2 cups each of grated Parmesan and Cheddar cheeses, and bake it at 350 degrees Fahrenheit for 50 minutes.
Make creamy egg strata by layering 1/2 cubed loaf of French bread in the bottom of a greased baking dish and sprinkling it with 3 tablespoons of melted butter, 2 cups of shredded Swiss cheese and 1/2 cup of grated Parmesan cheese. Saute 1 teaspoon of minced garlic and 1/3 cup of chopped onion in 3 tablespoons of butter for three minutes, and then stir in 3 tablespoons of flour. After a few minutes, add 1 1/2 cups of chicken broth, 3/4 cup of dry white wine, 1/4 teaspoon of nutmeg, and 1/2 teaspoon each of salt and pepper, bring the ingredients to a boil, then simmer everything for 15 minutes. Stir in 1/2 cup of sour cream, and whisk in 8 eggs. Pour the mixture over the bread cubes, and chill it before baking the casserole at 350 degrees Fahrenheit for 30 minutes.
