An easy way to make zucchini bread uses grated zucchini, flour, eggs, butter and spices. The preparation takes about 15 minutes, and the cook time is just under an hour.
To make zucchini bread, preheat the oven to 350 degrees Fahrenheit. Coat the inside of two 5- by 9-inch loaf pans with butter. In a large bowl, beat two eggs then add 1 1/3 cup sugar and 2 teaspoons vanilla. Stir in 3 cups of grated zucchini and 2/3 cup melted, unsalted butter.
Add 2 teaspoons of baking soda and a pinch of salt and stir it in. Add 3 cups all-purpose flour, a cup at a time, stirring after adding each cup. Mix in 2 teaspoons cinnamon and 1/2 teaspoon nutmeg. Add 1 cup of chopped pecans or walnuts, dried cranberries or raisins if desired.
Evenly distribute the batter between the buttered loaf pans. Bake at 350 degrees Fahrenheit for 50 to 55 minutes. Start checking to see if it is done after 50 minutes. It is done when a tooth pick inserted in to the center comes out clean. Leave in the pans to cool for 10 minutes, then turn the loaves out onto wire racks to finish cooling. Cut into slices after they are cool or just before serving.
