Martha Stewart's whipped frosting and quick vanilla buttercream frosting are easy whipped icing recipes. For the whipped frosting, place a heatproof bowl above, but not in, a pan of simmering water. Add three large egg whites, 3/4 cup of sugar, a pinch of salt and 1/3 cup of water.
Stir the ingredients constantly over a medium heat for 2 to 3 minutes until the sugar has dissolved. Spoon the mixture into a large bowl, and beat on medium-high for about three minutes until shiny stiff peaks develop. Add one-quarter teaspoon of pure vanilla extract. Beat the frosting on low just until the vanilla is incorporated. This recipe yields 5 cups of icing, which should be used at once.
For a fast buttercream icing, combine 3 cups of confectioner's sugar and 1 cup of butter using the mixer's whisk attachment. Use the low setting until the ingredients are fully combined. Then beat for 3 minutes on medium. Add 1 teaspoon vanilla and 1 tablespoon whipping cream.
