One easy way to make roasted potatoes is to cut small red potatoes into wedges, toss them with olive oil, then season them with salt and pepper. Spread the seasoned potatoes on a foil-lined baking sheet, and bake them for 40 minutes or until they're golden brown and tender.
Preheat the oven to 400 degrees Fahrenheit, and line a baking sheet with foil. When preparing the potatoes, cut them into wedges, small squares or chunks. Just be sure to make them roughly the same size for even cooking. Red potatoes and other small potato varieties work well for simple roasted potatoes because they're easy to cut into smaller pieces. Some potatoes are small enough that you can simply cut them in half.
After tossing the potatoes in olive oil, seasoning them with salt and pepper is the simplest option, but you can also add additional spices as you see fit to add more flavor. Options include parsley, rosemary, thyme, finely chopped fresh garlic and freshly grated Parmesan.
Another option for preparing roasted potatoes is to simply cut slits into whole potatoes, making sure not to cut all the way through. Drizzle olive oil or butter over the potatoes, and season inside the slits with salt, pepper and herbs. Roast the potatoes on a baking sheet for about 1 hour at 350 degrees Fahrenheit.
