Preheat the oven to 400 degrees Fahrenheit, and line a baking sheet with foil. When preparing the potatoes, cut them into wedges, small squares or chunks. Just be sure to make them roughly the same size for even cooking. Red potatoes and other small potato varieties work well for simple roasted potatoes because they're easy to cut into smaller pieces.
