For an easy chicken chow mein, stir fry cabbage, bok choy, carrots, garlic, prepared chow mein noodles and cooked strips of chicken, tossing in soy sauce and oyster sauce to combine. If you prefer, other vegetables to add to the stir fry include zucchini, snap peas and water chestnuts.
Prepare the chicken first with a marinade of soy sauce, sesame oil and rice vinegar, placing it in the fridge to sit. Next, cook the chow mein noodles in a pot of boiling water for four to five minutes, drain them and rinse under cold water to stop them cooking further.
Heat a tablespoon of vegetable oil in a large skillet or wok, and cook the chicken mixture until it is no longer pink. Transfer the mixture to a bowl and set it aside while you prepare the vegetables. With another tablespoon of oil, start cooking the vegetables, adding them to the skillet in order of firmness to help ensure even cooking. Fry the mixture until the vegetables just start to wilt.
Add a splash of soy sauce and oyster sauce to the vegetables and toss in the noodles to cook until they're hot. Add the chicken and toss everything until the mixture is well combined, and then serve it immediately, topped with chopped green onion.
