Two easy recipes for Velveeta mac and cheese include Velveeta down-home macaroni and cheese, and slow-cooker Velveeta macaroni and cheese. Each recipe requires five to seven ingredients and takes about 10 to 25 minutes to prepare.
To make Velveeta down-home macaroni and cheese, cook 2 cups of elbow macaroni. Melt 3 tablespoons of butter in a saucepan, and whisk in a 1/4 cup of flour. Cook and stir constantly for two minutes, then gradually add 1 cup of milk. Bring to a boil, and cook and stir for three to five minutes or until thickened. Add 1/2 pound of cubed Velveeta cheese, cook until melted, and then add the cooked elbow macaroni.
Place the macaroni and cheese in a greased, 2-quart baking dish. Combine 1 tablespoon of melted butter and 1/4 cup of crushed Ritz crackers, and sprinkle on top of the macaroni and cheese. Bake at 350 degrees Fahrenheit for about 20 minutes.
Begin making slow-cooker macaroni and cheese by spraying a slow cooker with cooking spray. Add 3 1/2 cups of milk, 2 1/2 cups of uncooked elbow macaroni, 1 pound of cubed Velveeta cheese, 1/2 cup of water and 1/4 cup of cubed butter to the slow cooker. Cover and cook on low heat for 2 1/2 to 3 hours. Turn off the slow cooker, stir the macaroni and cheese, and allow it to sit for 15 minutes before serving.
