Hollandaise Sauce for Vegan "Eggs" Benedict
This hollandaise sauce is cholesterol-free. However, it contains vegan mayonnaise and margarine. For a healthier meal, use a small serving of the sauce.

Ingredients (Hollandaise Sauce):
Mix all the ingredients for the sauce together. Transfer into a saucepan, put on the stovetop and heat up until warmed through.
Allow the spinach to wilt in a heated frying pan with 1 teaspoon olive oil. Transfer to a bowl. Cut the tofu into eight slices. Combine soy sauce and the remaining oil and brown the tofu in this mixture in the frying pan.
Arrange the layers of an English muffin, then spinach, then mock meat, if desired. Finish with a layer of tofu. Place in the oven, preheated to 300 F, for 5 to 8 minutes. Cover with the hollandaise sauce.
