Hollandaise Sauce for Vegan "Eggs" Benedict

Ingredients (Hollandaise Sauce):

  • 1 tablespoon white wine vinegar
  • 2 tablespoons melted vegan margarine
  • 2 tablespoons vegan mayonnaise
  • 1 tablespoon soy sauce
  • 1 tablespoon spicy brown mustard
  • 1/4 cup nutritional yeast
  • 1/2 cup plain soy milk
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper

Ingredients ("Eggs"):

  • Half a block extra-firm tofu
  • 2 teaspoon olive oil
  • 14 ounces baby spinach
  • 1 tablespoon soy sauce
  1. Make hollandaise sauce
  2. Mix all the ingredients for the sauce together. Transfer into a saucepan, put on the stovetop and heat up until warmed through.

  3. Make vegan eggs
  4. Allow the spinach to wilt in a heated frying pan with 1 teaspoon olive oil. Transfer to a bowl. Cut the tofu into eight slices. Combine soy sauce and the remaining oil and brown the tofu in this mixture in the frying pan.

  5. Assemble the dish
  6. Arrange the layers of an English muffin, then spinach, then mock meat, if desired. Finish with a layer of tofu. Place in the oven, preheated to 300 F, for 5 to 8 minutes. Cover with the hollandaise sauce.
