Some easy variations for making beef and noodles include adding in fresh or canned mushrooms and frozen vegetables such as corn, peas or carrots. Substituting canned gravy for the cream of mushroom soup is another common way to add variety to a classic beef and noodles recipe.
Classic beef and noodles are made by slicing 3/4 pound of beef steak into thin strips and seasoning them with a dash of pepper. Brown the beef strips in a skillet. Set the beef aside and drain the fat.
In the skillet, stir 1 can cream of mushroom soup, 1 onion (sliced), 1 3/4 cups of beef broth and 1/2 cup of water together. Heat the sauce to a boil and then add in 4 ounces of uncooked egg noodles. Reduce heat to medium and cook until noodles are tender. Cook until the beef and noodles are hot and bubbling.
Variations include adding 1 can of mushrooms or 1/2 cup of fresh mushrooms before adding the noodles. For vegetables, add 1/2 cup of frozen peas, carrots or corn to the skillet when beef and yogurt are added.
One jar of beef or beef and mushroom gravy may be substituted for the cream of mushroom soup.
