Turkey vegetable salad, curried pineapple turkey salad, creamy turkey spinach salad are all easy recipes which can be prepared in under half an hour. Turkey added to a green salad with chopped apples is also delectable.
Dice up some celery, onion, bell pepper, and other vegetables of choice and mix them with the cubed, chopped turkey. Stir in mustard, sour cream, yogurt, and a couple tablespoons of olive oil. This salad is a platform open to huge variation. For a lighter dressing, leave out the sour cream. Cubes of sharp cheddar cheese and toasted pecans add extra flavor to this salad. To make curried pineapple salad, whisk together 1 cup of yogurt, 1 teaspoon of curry powder, 3 tablespoons of lemon juice, 2 tablespoons of honey, and a pinch of salt and black pepper. Chop up 1 can of pineapple slices, and add them to a bowl with the turkey cubes and the yogurt dressing. Stir in a half cup of raisins and chill for at least an hour before serving.
For the creamy spinach turkey salad, mix together 1 cup of sour cream, 1/2 teaspoon of dill, 1/2 teaspoon of salt, a pinch of black pepper, one small minced onion, pickles and turkey cubes. Mix in the spinach and 1/2 cup of mayonnaise.
