Veracruz-style tilapia and baked tilapia with herb butter from the Food Network are easy recipes that use the fish. Tilapia tacos with cucumber relish from Real Simple is another good option.
To make the Food Network's baked tilapia with herb butter, mix 4 tablespoons softened butter with 2 tablespoons chopped fresh tarragon. Spread out 4 large pieces of foil. Divide 8 ounces sliced mushrooms, 4 sliced stalks celery and 1 sliced bunch scallions among them. Dot the vegetables with approximately half the herb butter and sprinkle the packets with salt and pepper. Lay 4 6-ounce tilapia fillets on top of the vegetables and dot with the remaining herb butter. Seal the foil around the food and bake on sheets for 18 to 22 minutes at 400 degrees. After removing the packets from the oven, allow them to sit for two minutes before opening.
To make Real Simple's tilapia tacos, season 4 6-ounce tilapia fillets with 1 teaspoon ground coriander and salt and pepper. Grill the fillets until cooked through, then break them into pieces. Toss 6 sliced radishes, 1 sliced cucumber, 2 tablespoons fresh lime juice and 1 tablespoon olive oil in a bowl. Serve with the fish in warm corn tortillas. Top the tacos with fresh cilantro and sour cream.
