To make a simple Texas caviar salsa, mix together one drained 15-ounce can of black beans and one drained 15-ounce can of black-eyed peas in a large bowl. Add one 8-ounce bottle of zesty Italian dressing, and stir well.
Mix in 1/2 chopped medium onion, 1 chopped green bell pepper, 1 bunch of chopped green onions and 1 pint of quartered cherry tomatoes. Add 1 tablespoon of minced garlic, 2 chopped jalapeno peppers and 1/2 teaspoon of ground coriander.
Season the mixture with salt and pepper to taste. Cover and chill the salsa in the refrigerator for at least two hours, and then garnish it with fresh cilantro before serving.
To make a spicy Texas caviar salsa, whisk 1/3 cup of olive oil, 1/4 cup of red wine vinegar and 1 1/2 teaspoons of Tabasco sauce together in a large bowl. Stir in 2 cans of drained and rinsed black beans, 2 cans of drained and rinsed corn, 2 large chopped tomatoes and 4 sliced scallions. Mix the salsa until well blended.
Add 2 ripe pitted, peeled and diced avocados, and toss lightly until evenly mixed. Season with salt and pepper to taste, and garnish with fresh chopped cilantro and sliced scallions if desired.
