To make Chilean sea bass tacos with chipotle cream, gather sour cream, salt, a can of chipotle chile in adobo sauce, chopped onions and tomatoes, butter, ground cumin, salt, cinnamon, garlic, fresh cilantro, Chilean sea bass, a lime and flour tortillas.
The first step is to create the chipotle cream by combining the sour cream, salt and chopped chile and set the mixture aside. Create the topping by mixing part of the tomatoes and onions in another bowl. Use the remainder of the tomatoes and onions, butter, cinnamon, nutmeg, salt and garlic, and saute the mixture in a hot pan. Add the fresh cilantro, and stir frequently.
Place the pieces of fish into the pan, on top of the mixture, and cook the fish thoroughly. Once the fish is done, peel off the skin and break the fish into bite-sized chunks. Stir in the lime juice, and top the food with grated lime rind. Next, fill the tortillas with the fish concoction, and top it with the fresh tomato and onion mixture and the chipotle cream to taste.
