An easy sweet and sour chicken recipe combines garlic powder, ketchup, lemon juice, crushed pineapple and brown sugar and requires 10 minutes of preparation and 15 minutes of cooking time. This recipe makes four servings.
Mix together 3 tablespoons of flour, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt and 1/2 teaspoon of ground black pepper in a bowl. Coat 1 pound of cubed skinless and boneless chicken breast in the flour and spice mixture. Add 2 tablespoons of vegetable oil to a large skillet, and heat it over medium-high heat. Add the chicken to the skillet, and cook it until the juices run clear, stirring to ensure even cooking. Transfer the chicken to a medium-sized dish.
Reduce the heat to medium, and add 1 tablespoon of vegetable oil to the skillet. Add 3 sliced celery ribs, 2 diced green bell peppers and 1 chopped onion. Cook for five minutes or until the vegetables are tender. In a small mixing bowl, whisk together 1/2 cup of ketchup, 1/2 cup of lemon juice, 1/2 cup of crushed pineapple with syrup and 1/3 cup of packed brown sugar. Return the chicken to the skillet. Pour the mixture over the chicken and vegetables, and bring it to a boil. Cook for two to three minutes, stirring frequently. Serve over rice.
