Maple roasted sweet potatoes, sweet potato-peanut bisque, black bean-smothered sweet potatoes and mashed sweet potatoes are all easy sweet potato recipes. Black bean-smothered sweet potatoes and mashed sweet potatoes can be made in only 20 minutes each.
To make black bean-smothered sweet potatoes, use a fork to poke 2 medium sweet potatoes several times. Microwave the potatoes for 12 to 15 minutes, until they are tender in the center. If no microwave is available, bake them in a dish at 425 degrees Fahrenheit for an hour. While the sweet potatoes are cooking, combine 15 ounces of black beans, 1 diced medium tomato, 2 teaspoons of extra virgin olive oil, 1/2 teaspoon of ground cumin and 1/2 teaspoon of ground coriander. Season the mixture with 1/4 teaspoon of salt. Heat this mixture in the microwave or in a saucepan until it is warm throughout. When the cooked potatoes can be handled, cut them in half and make an indentation in each side. Fill the indentation with the bean topping and serve the sweet potatoes with sour cream and cilantro.
To make mashed sweet potatoes, boil 10 cups of peeled and chopped sweet potatoes for 8 to 10 minutes in a large pot or Dutch oven of water. When they are tender, drain them and return them to the pot with 1/4 cup of butter, 3 tablespoons of honey, 1/4 teaspoon of cinnamon and 1/4 teaspoon of kosher salt. Blend with an electric mixer until the mix is smooth, then serve it hot.
