Real Simple features a recipe for bacon-wrapped potatoes with creamy dill sauce and a recipe for guacamole and chips, both of which make easy Super Bowl party dishes. Both recipes make eight servings.
For the bacon-wrapped potatoes with creamy dill sauce, steam 1 1/2 pounds of halved potatoes in a steamer basket in a large pan. Steam for about 15 to 18 minutes until tender, then let them cool. Heat the oven to 425 degrees F and line a rimmed baking sheet with foil. Wrap each potato with a piece of bacon and place them seam-side down on the baking sheet. Bake about 18 to 20 minutes until the bacon is crisp.
Meanwhile, whisk together 3/4 cup of mayonnaise, 1/4 cup of buttermilk, 2 tablespoons chopped fresh dill and 1 teaspoon of caraway seeds. Also season with 1/4 teaspoon of salt and 1/4 teaspoon of pepper. Serve this with the potatoes.
For the guacamole and chips recipe, cut 5 avocados into 1/2-inch pieces. Combine them in a large bowl with 1/2 finely chopped red onion, 1 seeded and finely chopped jalapeno pepper, 1 cup of freshly chopped cilantro and 2 tablespoons of fresh lime juice. Season the mixture with 1 teaspoon kosher salt and 1/8 teaspoon of black pepper. Stir the mixture well and serve with tortilla chips.
