- 3 pints fresh strawberries
- 3 cups superfine sugar
- 2 tablespoons Grand Marnier or other orange liqueur
- 1/2 Granny Smith apple, peeled, cored and small-diced
- 1/2 cup fresh blueberries
- Prepare the strawberries
- Cook the fruit
- Cool the jam
Rinse the strawberries in a colander, then drain and hull. Make them roughly an equal size by cutting the larger berries down. Toss with the sugar and orange liqueur in a heavy-bottomed pot or Dutch oven.
Heat the strawberries, sugar and orange liqueur over medium heat, bringing to a boil before adding the apple and blueberries. Maintain a rolling boil, stirring occasionally, for up to 35 minutes, or until the mixture reaches a temperature of 220 degrees on a candy thermometer.
Skim and discard foam from the top of the jam and allow to cool at room temperature. Cover and store in the refrigerator, where it will keep for at least 2 weeks.
