To make a quick strawberry glaze, combine 1 cup of mashed fresh strawberries with 1 cup of sugar, 3 tablespoons of cornstarch and 3/4 cup of water. Bring the mixture to a boil, stirring it constantly for approximately three minutes. Allow the glaze to cool for at least 10 minutes.
Once the glaze mixture comes to a boil, add a few drops of red food coloring to intensify the natural color of the strawberries. If you want a smoother glaze, you can either strain the glaze through a fine mesh sieve or run it through the food processor to achieve the desired consistency. Once it's cooled, spoon the glaze over cheesecake, ice cream or pies.
Make a classic strawberry pie topped with the homemade glaze. After it cools, spread approximately 1/3 cup of the glaze over the bottom of a 9-inch pre-baked pie shell, spreading it up the sides as well. Cut 5 cups of ripe, fresh strawberries in half and add them to the prepared pie shell. Top the pie with your homemade glaze, and place it in the refrigerator. Chill it for at least one to two hours, and garnish it with a dollop of whipped cream right before you serve it. Serve this strawberry pie on the day you make it to avoid a soggy crust.
