Kraft's easy spinach pie recipe is a quick and hearty no-crust version of the dish. The use of frozen spinach, stuffing mix and a microwave make it especially simple to prepare.
To make easy spinach pie, whisk 3 eggs and 3/4 cup of milk in a large bowl until they are well-blended. Add 2 cups of boxed stuffing mix, one 10-ounce package of chopped frozen spinach that has been thoroughly drained, 6 ounces of chopped smoked deli ham, 3/4 cup of cottage cheese and 4 sliced green onions. Season with 1/4 teaspoon of garlic powder, and pour into a 9-inch microwaveable pie plate that has been treated with cooking spray.
Microwave the pie on high for five to 10 minutes or until the center is set. Sprinkle the top with 1/3 cup of shredded cheddar cheese, cover it and let it stand for approximately five minutes or until the cheese has melted. Some suggested substituting turkey ham for a lighter version of the dish, and a couple of others said that including some feta cheese crumbles was a nice addition.
