To make AllRecipes.com’s soup, place the leftover whole chicken, including the frame and bones, into a large stock pot, and then add enough water to cover the chicken. Cover the stock pot and simmer the chicken gently for 90 minutes. Remove the bones from the water, leaving any meat behind.
Add 1 teaspoon whole black peppercorns, 2 bay leaves, 2 large chopped carrots and 1 large diced onion. Also add 1 cup fresh chopped green beans and 4 large diced potatoes. Add more water to cover the vegetables. Cover the stock pot, simmer the mixture gently until the vegetables soften, and add salt and pepper to taste before serving.
