Easy Side Dish Recipes: Cheesy Brussels Sprouts Casserole

This cheesy Brussels sprouts casserole makes a delicious side dish, and is good for you as well. In fact, Brussels sprouts rate among the top 20 most nutritious foods. They decrease the risk of obesity, diabetes and heart disease, and look promising in combating cancer, per Medical News Today.


1. Preheat the oven to 350 degrees Fahrenheit.

2. Remove the outer leaves from the Brussels sprouts and trim the ends. Cut any large vegetables in half.

3. Cook the rice according to the package directions, replacing the water with vegetable broth. With about five minutes remaining until the rice has cooked completely, add the Brussels sprouts to the pot to steam them.

4. In a medium saucepan set to medium heat, combine the flour and one half cup of the milk, whisking well. Add the remaining milk slowly, whisking constantly, until mixture is combined well. Bring to a boil and then remove from the heat.

5. Add one cup of the cheese and the sour cream and whisk until smooth.

6. Season the cheese sauce with the garlic powder, salt and ground black pepper, mixing well.

7. Combine the rice and Brussels sprouts mixture with the cheese sauce, then stir until well blended.

8. Spray a nine-inch by 13-inch casserole dish with nonstick vegetable oil spray and pour the casserole into it.

9. Add the remaining cheese to the top and place in the oven. Bake for 20 minutes. Serve warm.

Tips and suggestions: You can substitute broccoli or cauliflower for the Brussels sprouts florets. Steam them in the same manner as you would the Brussels sprouts. For an even cheesier casserole, substitute the sour cream with low-fat cream cheese or low-fat small-curd cottage cheese. Other shredded cheeses that you can use include smoked Gouda and Monterey Jack.
