Ingredients

  • Three cups Brussels sprouts
  • Two cups uncooked long-grain brown rice
  • Two and a half cups vegetable broth
  • Five teaspoons all-purpose flour
  • Two cups low-fat milk
  • One and a half cups reduced-fat shredded cheddar cheese
  • One-third cup low-fat sour cream
  • One-quarter teaspoon garlic powder
  • One-half teaspoon ground black pepper
  • One teaspoon salt
  • Nonstick vegetable oil spray

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Remove the outer leaves from the Brussels sprouts and trim the ends. Cut any large vegetables in half.
  3. Cook the rice according to the package directions, replacing the water with vegetable broth. With about five minutes remaining until the rice has cooked completely, add the Brussels sprouts to the pot to steam them.
  4. In a medium saucepan set to medium heat, combine the flour and one half cup of the milk, whisking well. Add the remaining milk slowly, whisking constantly, until mixture is combined well. Bring to a boil and then remove from the heat.
  5. Add one cup of the cheese and the sour cream and whisk until smooth.
  6. Season the cheese sauce with the garlic powder, salt and ground black pepper, mixing well.
  7. Combine the rice and Brussels sprouts mixture with the cheese sauce, then stir until well blended.
  8. Spray a nine-inch by 13-inch casserole dish with nonstick vegetable oil spray and pour the casserole into it.
  9. Add the remaining cheese to the top and place in the oven. Bake for 20 minutes. Serve warm.
