Make shrimp fettuccine Alfredo by cooking and draining the pasta per instructions on the package while retaining 1/4 cup of the cooking liquid. In a skillet, cook 1 pound of peeled and deveined shrimp, 2 chopped green onions and 2 minced garlic cloves in 2 teaspoons of olive oil over medium-high heat. After the shrimp are cooked, remove from the skillet, reduce the heat to medium, and add the 1/4 cup of cooking liquid, 1/3 cup of half-and-half, 3 tablespoons of cream cheese and 1/2 cup of Parmigiano-Reggiano cheese. Season with 1/4 teaspoon of black pepper, and cook for two minutes before adding in the shrimp and pasta. Garnish with 2 tablespoons of chopped fresh parsley, and serve.
To make broccoli shrimp Alfredo, bring 4 cups of broccoli and water to a boil in a saucepan, then simmer for eight minutes, and drain. Cook the pasta, and drain it. In a skillet, cook 1 pound of shrimp, 3 minced garlic cloves and 1/2 cup of butter until the shrimp cook thoroughly, and then remove the shrimp. Add 1 package of cream cheese, 1 cup of milk and 1/2 cup of shredded Parmesan cheese to the skillet, cook until the ingredients melt, and serve with the broccoli and shrimp.
