Easy Strawberry Shortcake Recipe
This recipe was originally published on Serious Eats. It takes less than 30 minutes to make and is a great way to use fresh fruit in the summer. Cooks can customize the recipe by substituting other fruit for strawberries.

Stem, hull and slice the berries. Mix the berries and the 2 tablespoons of sugar in a bowl and let them sit for 15 minutes at room temperature.
Cover a baking sheet with parchment paper. Turn on the oven to 425 degrees Fahrenheit.
Mix the flour, baking powder, 2 teaspoons of sugar and salt together in a medium mixing bowl. Make a well in the center and pour in a third of the cream. Stir the cream in with a wooden spoon, then pour in another third of the cream. Stir it in and then add the remaining cream. Keep stirring until dough forms.
Divide the dough into four portions and lay it out on the baking sheet. Bake the biscuits for 13 to 15 minutes until they turn golden brown. Let them cool before serving.
To make the whipped cream, mix the whipping cream and confectioners sugar together in a bowl. Mix the cream with an electric mixer until peaks form.
To serve the shortcakes, cut the biscuits in half and stuff each biscuit with the strawberries and whipped cream.
