Make a quick salmon quiche by first baking 1 pastry shell in the oven at 450 degrees for 13 minutes. As the crust bakes and cools, sauté 1 chopped onion in 1 tablespoon of butter until it softens. In a bowl, beat together 5 eggs, 2 cups of half-and-half and 1/4 teaspoon of salt. Layer 2 cups of shredded Swiss cheese on the pastry shell followed by 1 can of drained salmon, the onion mixture and the egg and cream mixture. Bake at 350 degrees for 45 to 50 minutes and garnish with minced fresh parsley.
To make smoked quiche, mix together 3 1/4 cups of hash browns, 1 tablespoon of melted butter, 1 tablespoon of Creole seasoning and 1/4 cup of Parmesan. Press the mixture into the bottom of a pie plate, and cook at 425 degrees for 25 minutes. Sauté 2 sliced leeks and 1/2 teaspoon of minced garlic in 1 tablespoon of oil until tender. Mix together the leeks, 4 ounces of cream cheese, 2 teaspoons of lemon juice and 3 eggs, and stir in 6 ounces of smoked salmon, 2 tablespoons of dill, and 1/2 teaspoon of salt and pepper. Pour in the crust, and bake for another 30 minutes.
