An easy salmon pasta recipe from Food Network combines salmon fillets fried in butter with shallots, snap peas and fettuccine, seasoned with mixed herbs, lemon, salt and pepper. It is quick and simple to prepare.
Fettuccine with Salmon and Snap Peas
Ready in less than half an hour, this recipe yields four servings.

- 12 ounces fettuccine pasta
- 8 ounces snap peas
- 4 tablespoons unsalted butter
- 1 shallot
- 1 12 ounces skinless wild salmon fillet
- Kosher salt
- Freshly ground black pepper
- 1/4 cup chopped fresh dill, parsley or chives
- Juice of 1/2 lemon
Step 1: Remove the strings from the snap peas and chop them into thirds. Thinly slice the shallot and cut the salmon into 2-inch pieces.
Step 2: Bring a pot of salted water to a boil and add the fettuccine. Cook as directed by the packet instructions and add the snap peas for the final 2 minutes of cooking time. Take 1 cup of the water from the pan and drain the rest.
Step 3: Heat half of the butter in a skillet on a medium-high setting before adding the sliced shallot to soften. Add the salmon after around 2 minutes, seasoning with around 3/4 teaspoon of salt and a pinch of black pepper. Remove from the skillet after around 3 minutes, or when the salmon is cooked all the way through.
Step 4: Add the drained pasta and snap peas to the skillet with half of the saved water, the rest of the butter, the lemon juice and the herbs. Cook for about a minute or until the pasta is fully coated, adding more water if necessary to prevent sticking.
Step 5: Finally season with more salt and black pepper, top with the salmon and serve.
