For the basic Beer Can Chicken recipe on Food Network, first discard the neck and giblets from a 4-pound chicken, rinse the chicken and pat it dry. Spread 2 tablespoons vegetable oil over the chicken and season inside and out with 2 tablespoons salt, 1 teaspoon pepper and 3 tablespoons of desired spice rub. Put the chicken cavity over a half-full can of beer and place the beer can chicken in the center of the grill, using the legs to balance the chicken. Cook chicken covered over medium-high heat for about one hour and 15 minutes, then let rest 10 minutes.
To make Peruvian Style Beer Can Chicken, soak a 3-pound chicken in a mixture of 1 1/2 teaspoons salt, 2 quarts water and the juice of one lime for 10 minutes, then rinse and dry the chicken. Make small holes in the chicken using a fork. Mix together 1 tablespoon vinegar and cumin with 1 1/2 teaspoons olive oil, oregano, rosemary, paprika and garlic powder, and 1 teaspoon salt, soy sauce and pepper.
