To make basic whipped cream frosting, pour 1 cup of heavy whipping cream, 1/2 teaspoon of vanilla and 1 to 2 tablespoons of sugar in a chilled metal bowl. Beat the ingredients with a chilled metal whisk until stiff peaks form.
Additional flavorings can be added to make chocolate, lemon or fruit-based whipped cream frosting. For instance, to make chocolate whipped cream frosting, measure 1 cup of heavy whipping cream, and place 1/2 teaspoon of vanilla extract, 2 tablespoons of unsweetened cocoa, 3 tablespoons of sugar and 2 tablespoons of the cream in the bottom of a chilled metal bowl. Mix the ingredients well to dissolve the cocoa, and add the remaining cream. Beat the ingredients with a chilled wire whisk until the frosting reaches the desired consistency.
When making raspberry or strawberry frosting, add 1/3 cup of cold fruit puree or jam to the basic whipped cream frosting recipe when soft peaks begin to form, and continue whisking the frosting until it reaches the desired consistency. Taste the frosting, and fold additional jam or sugar into the frosting if desired.
To make lemon frosting, make the basic frosting recipe, and add 1/4 to 1/3 cup of lemon curd when soft peaks begin to form. Continue whisking until stiff peaks form, add additional lemon curd or sugar to taste, and fold to combine.
