An easy vanilla fudge recipe can be made using 3 3/4 cups of confectioners' sugar, 6 tablespoons of butter, 3 tablespoons of milk, 1 tablespoon of vanilla extract and 1 pinch of salt. This recipe makes between 15 and 20 pieces of fudge.
To prepare, combine confectioners’ sugar, butter, milk, vanilla and salt in a 3-quart saucepan over low heat until the mixture becomes creamy. Pour the mixture into a greased 9x5-inch pan and refrigerate until the fudge is firm.
Another vanilla fudge recipe requires 2 cups of sugar, 2/3 cup of evaporated milk, 1/3 cup of milk, 1/8 teaspoon of salt, 1/4 cup of butter and 1 tablespoon of vanilla.
To prepare, butter the sides of a heavy 2-quart saucepan and combine sugar, milk and salt, and cook over medium-high heat until the mixture boils. Clip a candy thermometer to the saucepan and cook over medium heat until the temperature reaches 238 degrees Fahrenheit and the mixture has formed the soft-ball stage. Remove the mixture from the heat, add the butter and vanilla (do not stir) and allow to sit and cool to 110 degrees Fahrenheit.
Remove the thermometer and beat the mixture with a wooden spoon until the fudge thickens and loses its glossy appearance. Pour the fudge into a buttered 8-inch pan and score into squares.
