One easy recipe using mushrooms is a cream of mushroom soup. The ingredients are 8 ounces of fresh mushrooms, 2 tablespoons of chopped onions, 2 cups of chicken broth and either 1 cup of light cream or 1 cup of evaporated milk.
Other ingredients in cream of mushroom soup include 1 or 2 minced garlic cloves, 2 tablespoons of butter, 2 to 3 tablespoons of flour, 1/2 teaspoon of salt and 1/4 teaspoon each of black pepper and nutmeg.
Clean the mushrooms, and slice them. Melt the butter in a large skillet. Add the onions, garlic and mushrooms, and cook until the onions are tender.
Stir in 2 tablespoons of the flour. Add the chicken broth, and heat the liquid until it is slightly thickened. Stir constantly.
Stir in the cream with another teaspoon of flour. Add the seasonings and the cream to the soup. Heat the soup while stirring constantly until it's thick, and serve it. This soup makes six servings.
Sautéed mushrooms can go on baked potatoes or a steak. Gather and prepare 1 1/2 pounds of sliced mushrooms, 1 tablespoon of butter or margarine, 2 cloves of minced garlic and 1/4 cup of soy sauce. The seasonings are garlic powder and black pepper, both to taste.
Melt the butter over medium heat in a skillet. Add the garlic, and saute it for two minutes. Add the mushrooms, and cook them for five minutes. Add the soy sauce, then sprinkle on the garlic powder and pepper. Cook for about 10 more minutes, then serve.
