Uncle Ben's has an easy beef and rice casserole recipe with sour cream, cheddar cheese and mixed vegetables. Betty Crocker offers an Italian beef and rice skillet recipe with bacon, olives and mozzarella. Both recipes are easy to prepare and cook in under 30 minutes.
To make Uncle Ben's beef and rice casserole, prepare 1 cup of white rice according to package directions and brown 1 pound of ground beef in a skillet with 1 teaspoon of garlic powder, salt and pepper. Drain the beef, return to skillet and stir in 1 cup of mixed vegetables, a 14.5-ounce can of undrained chopped tomatoes and 8 ounces of sour cream. Cook until the mixture is warm, stir in rice and spread evenly into a casserole dish. Sprinkle 1 cup of shredded cheddar over the casserole and bake in a preheated oven at 350 degrees Fahrenheit for 20 minutes.
For a quick Italian beef and rice casserole, cut four slices of bacon into bite-size pieces and cook over medium-high heat until the pieces are almost done. Add 1/2 cup of chopped onion, 1/2 cup of chopped bell pepper, two cloves of chopped garlic, 1/2 teaspoon of salt and 1 pound of ground beef to the skillet and continue cooking until the beef is no longer pink,
Drain the meat mixture and return to skillet. Pour in 2 cups of water, an undrained 14.5-ounce can of diced tomatoes and a 2.25-ounce can of sliced olives and season with 1 1/2 teaspoons of Italian seasoning. Bring the mixture to a boil, stir in 2 cups of uncooked instant rice and cover. Reduce heat to medium, simmer about five minutes, sprinkle with 1 cup of shredded mozzarella and serve.
