One recipe that uses Ritz crackers is Mini Muffulletas. Mix 5 tablespoons cream cheese and 5 tablespoons of olive salad. Top 36 crackers with Swiss cheese and ham, then add the cream cheese mixture. Cover with 1/2 slice of salami, 1/2 slice of provolone and another cracker.
Another easy appetizer that uses Ritz crackers is Crab Au Gratin. Take 2 tablespoons each of finely chopped onion, garlic, celery and green peppers. A package of cream cheese, 4 ounces of pepper jack cheese, 8 ounces imitation crab meat and 1 package of Ritz crackers are also required.
Add the celery and garlic to a skillet over medium heat for 1 to 2 minutes. In a separate bowl, combine the imitation crab, cheese, lemon and onion. Add the celery and garlic and mix well. Spread the mixture in a 9-inch pie pan and top with crumbled Ritz crackers. Bake at 450 degrees Fahrenheit for 35 minutes or until the top is golden brown. Serve warm with more Ritz crackers.
Ritz crackers can be used in place of breadcrumbs for other dishes, such as meatloaf, crusted chicken and even onion rings. Crush the crackers to a bread-crumb-like consistency and add any desired herbs and spices before using.
