Use leftover roast beef to make a French dip sandwich. Slice reheated roast beef thinly, and layer on toasted French rolls. You may also add cheese to the sandwiches, and broil briefly until the meat becomes warm and the cheese appears bubbly. Heat a can of beef broth for dipping.
Another easy recipe is shredded roast beef tacos. Shred the roast beef, and cook in a skillet with a packet of taco seasoning and water. Put meat in taco shells, and serve with shredded lettuce, diced tomatoes, shredded cheese, salsa, guacamole and sour cream. For burritos, heat shredded roast beef with a can of diced tomatoes and green chillies. Wrap meat in flour tortillas adding rice, beans and other toppings as desired.
For an easy breakfast, make Southern beef hash. In a mixing bowl, combine 3 cups of coarsely chopped beef, 2 large potatoes peeled and diced, 2 medium onions, chopped, 1 green bell pepper, chopped, 2 ribs of celery, finely chopped, 1 teaspoon dry mustard, 1 teaspoon salt, 1 teaspoon garlic powder, 1/4 teaspoon thyme, 1 1/2 cups beef broth. Pour mixture into a greased casserole dish. Cover with foil, and bake at 375 degrees Fahrenheit for 45 minutes. Remove foil, and brown under broiler. Serve with fried eggs if desired.
