To make the Charleston cheese dip, combine 1/2 cup of mayonnaise with 8 ounces of softened cream cheese, 1 cup of grated sharp cheddar cheese and 1/2 cup of grated Monterey Jack cheese. Stir in 2 chopped green onions and 1/8 teaspoon of cayenne powder. Pour the mixture into a shallow baking dish, and sprinkle 8 crushed butter crackers on top. Bake it at 350 degrees Fahrenheit for approximately 15 minutes or until the dip is hot and bubbly. Garnish the dip with 8 slices of cooked and crumbled bacon, and serve it with crackers, corn chips or bagel chips.
To make the chili, fry 2 pounds of ground chuck with 1 chopped onion and 4 minced garlic cloves in a large pot, and drain off any excess fat. Rinse and drain the pinto beans from 2 15-ounce cans, and add them to the pot. Pour in 24 ounces of tomato sauce, 14.5 ounces of beef broth, 12 ounces of beer, 6 ounces of tomato paste and 4.5 ounces of canned chopped green chilies. Season the mixture with 2 tablespoons of chili powder, 1 tablespoon of Worcestershire sauce, 2 teaspoons of ground cumin, and 1 teaspoon each of cayenne, paprika and hot sauce. Simmer the chili for three hours or until it reaches an ideal consistency.
