Easy stuffed mushroom recipes include bacon, corned beef and goat cheese stuffed mushrooms. Corned beef stuffed mushrooms take the longest to cook at 25 minutes, while bacon stuffed mushrooms only take six minutes.
To make bacon stuffed mushrooms, beat 1 package of cream cheese until smooth and stir in 1/2 cup of bacon bits, 1 tablespoon of chopped green onion and 1/4 teaspoon of garlic powder. Measure a pound of white button mushrooms and spoon the filling into each one. Broil the mushrooms for four to six minutes.
To make corned beef stuffed mushrooms, remove the stems from 16 large mushrooms and fold and fit 1 slice of corned beef inside each mushroom cap. Top each mushroom with 1 teaspoon of sauerkraut, 1/2 teaspoon of Thousand Island dressing and 1 teaspoon of shredded Swiss cheese. Place the mushrooms in a baking pan, sprinkle with chopped chives and bake at 350 degrees for 20 to 25 minutes.
To make goat cheese stuffed mushrooms, pulse 2 slices of bread and 1 chopped garlic clove in a food processor and set 1/2 cup aside. Add 5 ounces of goat cheese, 1/2 cup of fresh parsley leaves, 1/4 teaspoon of red pepper flakes and salt to the processor and pulse until combined. Spoon the filling into each mushroom from 2 packages of white button mushrooms. Roll the filling side of the mushrooms in the reserved breadcrumbs and bake at 400 degrees for 15 to 20 minutes.
