To make cheese steak sliders, thinly slice 1 pound of tenderloin beef, 2 bell peppers and 2 onions. Then, saute the beef in cooking oil. Season with salt and pepper. Set the beef aside, and saute the peppers and onions. Arrange 16 mini bun bottoms on a baking sheet. Top each with beef, peppers, onions and shredded Provolone cheese. Place in a 375 F oven for six minutes. Set the mini bun tops on the sliders, and serve.
Alternatively, mix 2 pounds of ground beef, 1/4 cup of bread crumbs and 3/4 cup of finely chopped onion in a bowl. Press the mixture into the bottom of a 9-by-13-inch baking pan. Bake the ground beef and bread crumb mixture for approximately 30 minutes in an oven heated to 400 F. When the meat is done, drain off any liquid that accumulated during cooking.
Cover the meat with slices of cheddar cheese, American cheese or another cheese, and return it to the oven for about two more minutes. Let the meat cool, and cut it into 2-by-2-inch squares. Arrange the squares on mini bun bottoms. Top the sliders with condiments, such as mustard, ketchup, relish and pickles, and add the mini bun tops.
