An easy salmon patty recipe consists of 12 ounces of salmon, an onion, breadcrumbs, eggs, parsley and a few other ingredients. This recipe makes four patties, serves two to four people and takes about 15 minutes to prepare.
To make the patties, saut� half of a chopped medium onion in one tablespoon of olive oil until the onion is cooked but not yet brown. After you drain the cans of salmon, combine the salmon, onion, half a cup of plain breadcrumbs, a quarter cup of parsley, two beaten eggs, salt and pepper. Shape this mixture into four salmon patties.
Melt two tablespoons of butter in a pan over medium heat. Cook the patties on each side for about four to five minutes until the salmon starts to brown. When the patties are done cooking, place them on a paper towel to absorb extra oil.
This recipe can be served with a variety of sides like salad, rice, asparagus, green beans, carrots or quinoa. It can also be served in a sesame bun to make salmon burgers or in a pita pocket with some lettuce and tomato. For an extra hint of flavor, add a dash of lemon juice or lemon concentrate to the patty mixture.
