To make roasted potatoes with bacon and cheese, combine 1/2 cup of ranch dressing, 1/2 cup of shredded five-cheese blend and 1/4 cup of bacon bits in a bowl. Add 2 pounds of quartered red potatoes, and toss to coat. Transfer to a greased baking dish, cover and roast for 55 minutes at 350 degrees Fahrenheit, uncovering after 40 minutes. Sprinkle with parsley to serve.
To make balsamic roasted potatoes, mix 3 tablespoons of olive oil, 1 1/2 teaspoons of dried thyme, 1 teaspoon of dried and crushed rosemary, 1/8 teaspoon of ground nutmeg and 4 chopped garlic cloves.
