An easy recipe for rice pilaf is made by combining uncooked rice with broth and seasonings. This mixture is cooked until the rice is tender. In addition to the basic rice pilaf recipe, some recipes include mushrooms, raisins, cranberries and pecans, as desired.
Melt 1/4 cup of butter in a saucepan over medium heat. Add one large chopped onion and 8 ounces of sliced fresh portobello mushrooms to the butter, and cook until the mushrooms are golden brown and the onion is tender. Stir in 1/2 cup of uncooked brown rice and 1/2 cup of uncooked wild rice. Cook for one minute before adding 2 3/4 cups of beef broth. Heat to boiling, and then reduce heat, cover and simmer for 45 to 50 minutes or until the liquid is absorbed and the rice is tender.
Add 1/4 teaspoon of salt, 1/4 teaspoon of pepper, 2 teaspoons of fresh thyme and 2 tablespoons of butter. Stir into cooked rice, fluff and serve.
Some recipes use chicken broth in place of beef broth, and some recipes use all wild rice or all short-grain rice in place of a combination. When adding fruit or nuts, many recipes call for adding 1/2 cup of chopped nuts and 1/2 cup of chopped fruits.
