Mash 2 ripe bananas with 2 tablespoons of canola oil, 1 egg, 1/2 cup of fat-free milk and 3/4 teaspoon of vanilla extract in order to make quick and easy banana-oat muffins. In another bowl, add 2/3 cup of white whole-wheat flour to 1/2 cup of quick-cooking oats, 1/4 cup of sugar, 1 3/4 teaspoons of baking powder, 1/2 teaspoon of ground cinnamon and 1/4 teaspoon of salt. Stir the two mixtures together, and pour the batter into muffin cups. Bake the muffins at 375 degrees Fahrenheit for 16 minutes.
Another easy recipe calls for 1 cup of old-fashioned oats, 1 cup of whole wheat flour, 3/4 cup of brown sugar and 1/2 cup of all-purpose flour. Stir those ingredients plus 2 teaspoons of baking powder and 1/2 teaspoon of salt in a bowl. Beat 2 eggs, 3/4 cup of 2 percent milk, 1/4 cup of canola oil and 1 teaspoon of vanilla extract in another bowl. Add the dry ingredients to the wet ingredients, but don't over-mix. Pour the batter into muffin cups, and bake for 15 to 17 minutes at 400 degrees Fahrenheit.
